Frissan! Not A Swedish Hairdresser.


 
After last week’s little hiccup we went in search of a refreshing change… Great food, superb ambiance, attentive waiting staff and good company. In San Miguel de Salinas we may have found all of this and then some. Husband and wife team Jayne and Stuart have created in Frissan a wonderful space to come to eat, meet friends and relax. Decorated in a style closer to modern minimalist rather than traditional they have managed to convey warmth, not falling into the trap of allowing this modern style to become all about efficiency and sharp edges.
 
Jayne is the perfect host showing us to our table and taking our drinks order. Leafing through the menu you will quickly learn there is a wide choice of a la carte together with both menu del dia and menu del noche. There’s even a children’s menu, something you don’t normally find in a restaurant as refined as Frissan. That’s not to say that this restaurant is pretentious or stuffy, it most certainly isn’t!
 
Before opening the menu Jayne informed us that the soup of the day was curried parsnip, that’s not one you see everyday and because I have been meaning to cook some parsnip soup myself recently I decided to explore this variation. Pam’s choice of minced beef served with a combined tomato, pepper salsa and Romaine lettuce was crisp, very light, slightly spicy a combination that was irresistible. Especially when you scoop the beef and salsa into the lettuce leaves and eat these vegetable parcels with your fingers. Very tactile!
 
Now roasted parsnips are for me one of the truly great winter vegetables. Think about that parsnip flavour with just a hint of curry heat prepared as almost a consomme soup, this was my starter. Wonderful!
 
Pam had pan fried duck breast with a sweet port sauce served on a bed of savoy cabbage, accompanied by new potatoes. Now if you have been following these reviews you’ll think I’ve gone mad! Yes I chose Sea Bass again. Well after my disappointment last week I was left still wanting to sample this most delightful, delicate white fish. I wasn’t left wanting on this occasion! The two pan fried fillets were served on roasted vegetables with saute potatoes. We had also been tempted by a side dish of honey roast parsnips, I told you I had a thing about them!
 
This was washed down with a bottle of Raimat Vina 27 Chardonnay. This is a pale yellow wine which creates a sensation of freshness thanks to its acidity, the lingering finish has a note of sweetness. Aromas of tropical fruit, grapefruit and citrus fruit, there’s also some melon in there somewhere. Ah! And here’s a thing remember I said we wanted attentive waiting staff? Well Jayne asked if she should leave corking the wine until we had finished our pre-diner drinks. I really appreciate this, so often one feels rushed and the wine then sits poured in the glass while you finish your drink. Thank you Jayne.
 
Onto the desserts… Sticky toffee pudding with ice cream and Oranges in Cointreau with cream and pistachio nuts. Sublime! Guess who had the sticky toffee pudding? Alright I own up but offer in my defence that it was extremely light and therefore contained very little in the way of calories, yeah right!
 
This was not an expensive meal. Roughly €25 per head for three courses including a   bottle of wine. For a meal of this quality in these surroundings it is very good value indeed. Oh and did I mention the toilets? It’s really a girly thing, but if you need to pay a visit you’ll understand why I mention them, fantastic!
 
Frissan has improved from when I last visited it a year or so ago. The food was always good but they have done something with the decor that improves the ambiance, well done!  This will be on my list of great Costa Blanca restaurants I hope you’ll give it a try. If we’ve tempted you to try Frissan for yourselves then this might be of interest to you. At the time of writing they have a few places left on Valentine’s night. If you eat from the a la carte menu then the ladies will receive a bottle of cava, flowers and chocolates
